red sauce

A general term for any low-fat, low-calorie, tomato-based sauce used in the Italian kitchen for preparing pasta, rice, fish, meat, and vegetable dishes.

Red sauces are said to be healthier than dairy-based white sauces, which are higher in animal fat and calories.
