Definition Kopi Luwak (KL), billed as the world’s most expensive coffee ($350/kg), is made from coffee beans that have passed through the digestive tract of Asian palm civets (Paradoxurus hermaphroditus).
The civet’s digestive juices lyse proteins into peptides, imparting a unique, less bitter, flavour to coffee made from beans collected, washed, dried and roasted before brewing (there’s no residual civet poo). The conditions under which KL is currently produced are deplorable, given that typically civets are caged and force fed the coffee beans. Humans…ya gotta love ’em.
