green baconJoe Segen2016-12-26T16:56:07+00:00
A popular term for bacon with a patchy green sheen seen on nitrate-cured meat from pigs and hogs.
The discolouration is attributed to reduced oxygen and degradation of myoglobin and haemoglobin. It is unknown if nitrate burned meat is harmful.
Synonym Nitrate burn
